INGREDIENTS
- ¼ cup parsley leaves and tender stems
- ¼ cup cilantro leaves and tender stems
- ¼ cup mint leaves
- pinch of salt
- ¼ cup olive oil, plus more as needed
- Handful of cherry tomatoes, halve
- 1 large slicer tomato, cut into wedges
- Flaky salt, as needed
DIRECTIONS
- Blend parsley, cilantro, mint, salt, and olive oil in a blender until smooth.
- Generously coat tomatoes in herb oil. Shower with flaky salt.
