INGREDIENTS

  • ¼ cup parsley leaves and tender stems 
  • ¼ cup cilantro leaves and tender stems
  • ¼ cup mint leaves
  • pinch of salt
  • ¼ cup olive oil, plus more as needed
  • Handful of cherry tomatoes, halve
  • 1 large slicer tomato, cut into wedges
  • Flaky salt, as needed

DIRECTIONS

  1. Blend parsley, cilantro, mint, salt, and olive oil in a blender until smooth.
  2. Generously coat tomatoes in herb oil. Shower with flaky salt.
